Wagamama Restaurant, Fulham

Legionella Compliance Project

INTRODUCTION

A comprehensive water safety compliance initiative implemented across 40 Wagamama restaurant branches in Southwest England, with particular focus on the Fulham Broadway location as a case study. This project, valued at £50,000, demonstrates our systematic approach to legionella risk assessment and mitigation in commercial food service environments, ensuring all facilities meet ACoP L8 (2013) standards while maintaining operational continuity.

Project Details & Challenges

Address: Fulham

Broadway, London

Client: Wagamama Restaurant

Funding: Private / Independent

Project Cost: £45,000 to £55,000

Problem Statement

Maintain water safety

throughout 40 branches in

Southwest England,

ensuring all restaurants

have been assessed and

safeguarded against

legionella bacteria, in

compliance with ACoP L8

(2013) standards.

3

Key Challenges

Testing hot water temperatures during

store hours when usage affected

accurate readings

Achieving reliable 60°C water temperature critical for eradicating Legionella bacteria

Limited access as most remedial works

required completion outside trading hours

Varying scope and requirements across 40 different branch locations

Methodology & Implementation

Assessment Phase

Our first step was conducting full water services inspections and legionella surveys across all locations. These comprehensive

assessments produced detailed action plans that were implemented as part of ongoing working procedures.

Each site varied in scope and cost, depending on the extent of works and materials needed. The Fulham branch was selected as our case study due to the range of compliance issues identified and subsequently rectified.

Prioritisation Framework

Based on initial surveys and risk assessments, we developed a structured action plan categorising required works by risk level:

  • HIGH priority actions: completion within 1 month
  • MEDIUM priority actions: completion within 3 months
  • LOW priority actions: completion within 6 months

This framework included both essential

remedial works and preventative improvements.

Solutions & Outcomes

Temperature Testing Protocol

Temperature testing was conducted at store opening times, ensuring systems

were at peak temperature before use. This approach provided accurate readings and confirmed compliance

with the critical 60°C requirement for legionella prevention.

After-Hours Remediation

Remedial works, including pressure gauge installations, pipe insulation, and dead leg removal, were carried out

post-11pm after store closure. This scheduling allowed for safe, undisturbed work withoutm impacting restaurant

operations.

Compliance Achievement

The Fulham Broadway branch is now fully

compliant with ACoP L8 guidelines following our structured approach to risk

mitigation. This successful model was replicated across the remaining

branches to maintain consistent water safety standards contract-wide.

Client Relationship & Feedback

Wagamama has been one of our regular clients for all commercial heating and plumbing works for over 2 years, and they are very satisfied with our customer services and high standard of works.

Key Success Factors

By prioritising works based on risk level and aligning them with operational hours, we ensured efficiency and minimal disruption to the restaurant's business. The systematic approach developed for the Fulham branch created a replicable template that was successfully implemented across all 40 locations.

This project demonstrates our ability to manage complex compliance requirements across multiple commercial locations while maintaining operational continuity. Our structured methodology ensures that all water systems meet safety standards without compromising the client's business operations.
